Couscous and tajine are the flagship dishes of Moroccan cuisine and eastern culture. These traditional dishes are garnished with mutton or fish and accompanied by various types of vegetables. Moroccan cuisine also has pastillas, dishes from the Andalusian culture, traditionally eaten during holidays.
Exquisite and tasty, the cuisine consists of mechoui (whole roasted lamb, traditionally reserved for large ceremonies), bakbouka (rice balls and viscera), kaake (a popular cake), k'lila (hard cheese), and khliaa (marinated beef).
Wash your hands thoroughly before each meal. According to tradition, Moroccans share a common dish placed at the centre of the table so that all the guests can serve themselves from it. The bread acts as a utensil allowing you to grab pieces of vegetables and tagine meat.
